Homemade Health Pancakes
2 eggs
3/4 cup almond flour (or other gluten-free flour)
1 mashed banana
1 tbsp almond butter (organic peanut butter also works great here)
1/2 tsp baking soda
1/4-1/2 cup unseetened non-dairy milk (ex. almond, coconut, cashew)
Sprinkle of cinnamon

  • Mash banana and whip in two eggs.
  • Add dry ingredients, followed by non-dairy milk, until desired consistency.
  • Cook on med-low heat. Top with maple syrup. Enjoy!
