Who doesn’t love an order of crispy zucchini sticks, especially when relaxing on a patio with a group of friends? Not only is this recipe really easy to put together, but we think you’ll fall in love with the crispy “junk food like” taste (especially since it’s gluten and dairy free)! We got the idea for this recipe from Chocolate Covered Katie, and with a few adjustments we think we nailed it!

Homemade Crispy Zucchini Sticks
Total Time: 20m
Yield: 40-45 zucchini sticks
Ingredients:
2-3 small zucchini, sliced into fry shapes
1/4 cup gluten-free flour (we used chickpea flour)
1/4 tsp sea salt
1 tbsp nutritional yeast
1/2 cup unsweetened cashew milk (or other non dairy milk)
1 cup gluten-free breadcrumbs (We used Organic Works ® gluten-free bread and made our own crumbs)
Instructions:
  • Preheat oven to 420F. Lightly grease a cooling rack with coconut oil, place it on a baking tray, and set aside.
  • Set up an assembly line: flour and spices in one bowl, milk in another, and breadcrumbs in a third. Dip each zucchini stick in the flour, then the milk, then the breadcrumbs. Place on the cooling rack.
  • Bake 18-19 minutes, or until desired crispiness is reached. Makes 40-45 fries.
