What could be better than apple pie?
How about an apple pie tasting snack that is actually good for you? Being sugar-free, dairy-free, gluten-free, and vegan!
These bad boys are also high in protein, will balance your blood sugar levels, and make a great pre or post workout snack.
We got this awesome recipe from My Whole Food Life, and after playing around in the kitchen and subbing out the oats for quinoa flakes, we think we have the perfect summer snack recipe.
Apple Pie Energy Bites:
2 cups quinoa flakes
1 apple sliced
1 cup almond butter
2 tablespoon hemp hearts
2 tablespoon chia seeds
2 teaspoon cinnamon
2 tablespoon maple syrup
Combine all ingredients in the food processor. If the mixture looks a little wet, you can add in some more quinoa flakes. Take a taste. If it’s not sweet enough for you, feel free to add a little more maple syrup.
Roll into balls or use a cookie scoop to drop balls onto a lined baking sheet.
Set in the fridge to chill for 30 minutes.
Store these in the fridge. You can also freeze them! Enjoy!
