We LOVE carrots (and particularly carrot cake) here at Staterra, so needless to say we fell in love with the recipe Beth at Tasty Yummies posted for a carrot cake smoothie.

We made a few changes to simplify the process and added some greens. We still kept the recipe Vegan, but feel free to use unpasturized honey here to sweeten as well.

Here is our take on the Carrot Cake Smoothie:

Ingredients:

2 cups spinach
1 banana
1 cup unsweetened cashew or coconut milk
1 cup grated carrots
1 tsp cinnamon
2 tbsp almond butter
Real maple syrup or Stevia to taste.
(*Water and ice to desired thickness)

  • Combine ingredients in order as listed above and blend well.
