10 oz YOSO dairy-free yogurt (unsweetened)
1/3 cup nutritional yeast
1/2 teaspoon chili powder
1 can black beans (BPA-free ideally), rinsed and drained
2 medium/large ripe avocados, chopped up and a little bit smooshed
1 tomato, chopped
1 teaspoon sea salt (or more to taste)
1 small jalapeño diced (if desired)
2+ cups salsa (bought or homemade; medium or mild in spice)
1 cup shredded butter lettuce
2/3 cup sliced scallions
Mix the yogurt, nutritional yeast, salt and chili powder well.
Layer the remaining ingredients as follows (bottom up): Beans, yogurt mix mix, avocado, jalapeños, salsa, lettuce, tomatoes, scallions.
Serve with Mary’s Organic Crackers and unlimited raw vegetables.
